The Gueuze Tilquin - draught version (4.8% alc/vol) is a spontaneous fermented beer, produced by blending a low alcohol lambic (called Meerts) and 1 and 2 years old lambics, all fermented and aged in oak barrels. It is unfiltered and unpasteurized, and it is refermented in the keg. The lambics used were fermented and oak aged in our installations. These lambics are coming from worts brewed by Boon, Lindemans, Girardin and Cantillon breweries.

5a Anniversary Wild Ale was brewed in the fall of 2019 with @vermontmalt Pilsen malt and raw wheat from Nitty Gritty Grain. This beer was fermented in a 10hl open top oak Foudre with our house mixed culture. A third of the fermentable ingredients in this beer were raw wildflower honey from our apiary, as well as French Hill Apiary here in Vermont. Post fermentation and aging, we moved this wild ale to 500l oak Puncheons where we added the addition of aged hand-hewn Vermont Eastern Red Cedar and Bergamot Citrus. Bottled January 2021

Famous for its champagne-like spritziness. The aromas and flavours will evolve from notes of vibrant fresh citrus, zesty and grassy notes to a mellow, oaky, stone fruit bouquet. Lambic and Geuze are living, cultural heritage rooted in the Zenne Valley. No two bottlings are alike, as there are multiple variables in the blending process, a variety of barrel sizes and shapes, differences in aged lambic proportions in the blend, etc. When cellared properly, 3 Fonteinen Oude Geuze can be aged for several decades.

The lambics used were fermented and matured in our own oak barrels at the blendery. They are made from worts brewed by Boon, Lindemans, Girardin and Cantillon. The taste is tart and dry but has a certain roundness that makes this Gueuze à l’ancienne particularly accessible for non-experts. It will also delight fans of the genre for its sweet complexity. It also has a slight dry bitterness because of the youth of the oak barrels used, as they still release some tannins. It has a fresh lemony nose.
